SO many have told me how they LOVE this stuff! How it is a staple in their diet, how they substitute it for real spaghetti!.. I've always been afraid of the stuff! A big hard rock that is suppose to resemble Spaghetti when you cook it!<br />
So a couple months ago I bought one!<br />
Not really sure how to cook it I went online and started looking up recipes. Well I was BOMBARDED with recipes! Which for some reason made it even more terrifying but also so much more intriguing! "what is this stuff!"<br />
So I did the most 'simple' thing I had herd...substitute it for your regular spaghetti and dress it just like you would the delish italian carb you normally eat! So there I sat, a nice plate of spaghetti Sqash smothered in my fav tomato sauce ...my heart still racing from the loud noises I made banging the darn thing on the counter trying to pry the thing apart to cook it, and burnt fingers from scraping out the piping hot strands of squash when it was done baking. Lets just say I was waaay amateur at this thing! Well my first bite was ....disappointing, the stuff did not taste anything like the delectable stuff I call spaghetti (can you tell how much I LOVE spaghetti!)<br />
To be honest it wasn't bad it just didn't taste as I expected! Or possibly hoped.<br />

A few weeks after my Spaghetti Squash experience it came up in conversation and someone stated, its so good but it definitely can't replace real spaghetti its different in its own yummy way! Then the light bulb went on! I was only disappointed as I thought I would of found a substitute for my yummy yummy but carb filling spaghetti, but when I took that expectation out of the equation it was so good! So I went and bought another one! This time putting mushroom Alfredo sauce on it, it was good.<br />

Although I still was not 100% satisfied or ready to join the "Spaghetti Squash Club" and determined to love this stuff ( anyone who knows how I love to eat knows it kills me when I don't like something... so I eat it until I love the stuff! ) I started looking again for a recipe I could follow. With knowing my previous experience of this I was prepared, open to ideas and my kitchen had endless possibilities. I found a recipe for lasagna spaghetti squash bowls! But I didn't have many of the ingredients so I turned the computer off and raided my kitchen for what ever I thought might be good in lasagna! After some creation and not a clue of how this might taste, dinner was served! My hubby loved it and even asked if I could make it again! :) yay me! Finally I LOVE spaghetti squash!! I am so happy I was able to create this meal! I love creating dishes off the top of my head with what ever I have I always have...my sisters called me crazy when I was little but I just have so much fun!<br />

Cut Spaghetti Squash in half, brush olive oil on and sprinkle with salt and pepper<br />
bake your spaghetti squash. While that is baking roast some garlic.<br />
Cut end off of garlic bunch brush with olive oil and bake with olive oil side down.<br />

While those are baking, cut up a small onion and cook down with a tbsp of olive oil, I love garlic so I also added some fresh garlic. ( my tomato sauce had mushrooms in it, but if you have a tomato sauce that doesn't but you want mushrooms in it add them now) Once onions are transparent add some ground beef, and brown. When everything is all cooked up added your tomato sauce ( I used a mushroom tomato spaghetti sauce) Simmer.<br />

Once your Spaghetti Squash is done and after it has cooled enough to touch scrape Spaghetti Squash from sides of the skin or "bowl" as I like to call them. Keeping the Squash in the "bowl" mix in your roasted garlic and stir in some cottage cheese. then add your yummy tomato meat sauce and sprinkle with cheese on top.<br />

I popped those lil guys back in the oven to melt the cheese on top and dinner was ready!<br />

I definitely have dropped of the face of blog planet for a while and when ever this happens I hum and haw about wether or not to keep this blog up or not?<br />
<br />
Since having Ellie I have had many struggles I did not think I would have being a mother! I have looked forward to motherhood my whole life, always loving all of my dolls as a child, each of them having there own first and middle name, setting up a school room so I could be the teacher to all of my pupils which consisted of every doll and stuffed animal I had. Always being the "sitter" on the block with multiple offers to watch the neighbourhood kids on friday and saturday night, and enjoying nannying for the families I worked for! Don't get me wrong I LOVE being a mom and enjoying my days with my sweet Ellie girl! I just never thought I would be the one to "lose motivation" "gain all the baby weight back plus some after I had just lost a 3rd of it." but most of all to let these things and other things get me down. Now I am not looking for a pitty party here, just some background info of where this blog is coming from. SO! As I pondered the question of keep blogging...stop blogging it hit me!<br />

<br />
WHY NOT? As I thought about this all I could think of were <strike>reasons </strike>excuses to not! That is when it really hit me, how many of us make excuses to not do things in life, and I'm not just talking about avoiding mopping the kitchen floor or doing the dishes in the sink. Choosing to have an excuse to get us out of doing those things that we want to do, but are maybe a little scared to do. I believe for me lots of that has to do with fear, fear of failing, fear of not meeting our "standards" fear of things not turning out the way we had hoped. Or do we daresay fear of what others will think of us?!. Lets face it though, thats life. If we let fear get in the way of everything we do, we wont do much now will we?<br />
<br />
Who cares if we "fail". I dislike this word, and it has never made that much sense to me, as I remember a quote I once herd "We only fail if we don't try." I love this quote and how true it is! Just because we didn't get the outcome or results we had hoped for, doesn't mean we failed. Just because we did not lose as much weight as we had hoped for the first go around does not mean we failed, it means we tried and we are better for it! So no more missy! No more punishing our selfs with the word "fail" when we have tried!<br />
<br />
What if we put the word accomplish(ed) in for every time we wanted to use the word "fail(ed)." We are human, we are not perfect machines. We will get messy, probably make a few mistakes, or a lot. People may judge us, but who cares! Jump in! Be you, be yourself, learn, grow, create, get messy! So what if the old lady down the road thinks your crazy! This is my goal this month! To jump in and DO things!<br />
<br />
Once I get passed my fear I find myself not doing many things because I think, "well I don't know how to do that", or "wow that might take a while", "I don't know if I can" or my favourite one, "I'm just to tired" (...we all know we mean lazy) Well get off of your britches and get goin! The day ain't getting any younger! Set a goal, stay motivated and better yourself! Even if it is just by a pinch each day, grow into who you want to become! Realize your accomplishments, congratulate your self on these and let them continue to motivate you.<br />

So going back to the question from the beginning of this blog, 'do I keep this blog up?. Why not? I will! Why? Because I can! I love writing, although I am no editor, journalist, or novelist, I enjoy it! I always wanted to become an author! That was always my answer of what I wanted to be when I grew up! So in a little way I look at this blog as accomplishing that dream.<br />

So here is to setting goals, accomplishing the days scariest things, and just loving life!<br />

I think it is so important to have these kinds of games, to learn through play! I remember playing for hours with <a href="http://www.ebay.com/itm/Learning-Resources-Parquety-block-super-set/221178765641?ssPageName=WDVW&rd=1&ih=012&category=11734&cmd=ViewItem">puzzles</a> and the <a href="http://www.ebay.com/itm/Learning-Resources-Parquety-block-super-set/221178765641?ssPageName=WDVW&rd=1&ih=012&category=11734&cmd=ViewItem">Parquetry Blocks</a> when I was younger! As I was looking at these games I have become so excited to play with my little girl, games, dancing, crafts what a party!! I know it will still be a little while until the crafts, and games come out, but hey a Mom can get excited right!? </div>

I have always had this fascination with, collecting matching containers, heaven forbid there became an empty jar...I was in my glory! Jars, of any shape, size and form were my favourite by all means. Being asked many times "what are you going to do with all THIS container, why do you need ANOTHER jar? Yes I was the pack rat when I was young. Never having to many egg cartons, or similar containers from yogurt, sour cream, honey and what ever else you could buy in a container, and never having a clue what I was going to do with all of them, I just liked collecting, and then finding a grand scheme what to do with them! Eventually it would get to be to much and with my love of organizing and cleaning things out (shhhh don't tell anyone) they all became very well known to the recycling. A few months back I was washing out an Alfredo sauce jar, and I couldn't help but stash it under my sink, but it looked so lonesome I had to keep washing and stashing jars when ever I got the chance!<br />

Before I was put on bed rest I taught many preschool dance classes for the City of Calgary. I also taught an activities/games/ movement class where children came and we made different crafts, played different games, creating and learning. Every week these kids communications skills, gross motor skills and listening skills improved. I loved teaching this class! </div>

I am very passionate about teaching through play. I have always been a hands on person, who struggled in school, but exceeded when I was taught things through experience by doing things and being active. We all know how important it is to be active, weather we are babies, young kids or adults. </div>

I also teach an Autism Movement Therapy program, where children with Autism Soar! That is a whole different blog though so I wont get distracted. But as I have been doing this classes I have become passionate about helping kids find ways they can learn, and grow and enjoy it! </div>

This game is made by "Learning Resources" the "Smart Toss Bean Bag tossing game" encourages kids through games and active play to challenge kids gross motor skills. Inviting players to create their own games, match colours and shapes, or numbers, by tossing the bean bags in the holes.<br />

Smart Toss encouraged lots of children to want to go and join in with the numeracy learning. Having the 4 games really helped as I was able to meet different childrens needs including extending more able children, for example by adding two numbers together.</div>

Mommy got bronchitis at 8 weeks, I was quite nervous but thankfully I was able to take some things for it and it passed as I started getting morning sickness, and soon it was just the two of us up during the middle of the nights having our little 3 am snack! You have mommy wanting all her root veggies! mMm! I had a couple of weeks where I couldn't get enough beets! So delicious! As much as Mommy loves Ice Cream you don't! Or rather nothing really sweet at all! Somedays we cannot even eat fruit as that is too sweet. You also were not a big fan of Ground Beef, Oatmeal or Eggs, these things have all gotten to be ok with you except Ground Beef does not taste like anything at all or is not very appealing. Ice Cream, or sweets, are still not the greatest but thats ok! We will stay nice and healthy!</div>

I did have almost not voice this morning so teaching the grade 6-9 girls in a large gymnasium was a bit challenging! But none the less I made it through!<br />
Besides my cold I am feeling quite well, with surprisingly a good amount of energy to boot! So I have had many very negative comments of how are you going to get better just on juice!? Well I know I am sick but I AM getting better, AND only on juice! I have only gotten better not worse! Now as I got this cold the morning of the first day I started I really don't believe that this Juice fast made me sick. I have not cheated and my body is healing! Now for the protein comments!! Yes this did worry me quite a bit and I felt I needed to do some more research! So I went to my trusty <a href="http://herbdocblog.com/">herbdocblog.com</a> to read up to see what my friend Dr Schulze had to say about juicing and doing a detox. I won't go into to much detail as my purpose of this blog is not to convince anyone to agree with me, but to just share my journey! So all I will say is WOW! I could not stop reading his books! (which you can get right off his blog!...for free!) I was amazed at all the learning I have had today! I definitely did not do as much research as I should have before I started this 60 day juicing fast...which really, ok lets ditch the word "fast", cuz I aint starving my self, more like flushing my body of all the junk in it! So from now on we will refer to it as, the juice flushing!<br />
Ok so my plan now! As Dr Schulze has recommended that starting with a 5 day detox program of juicing monday to friday, and if the problem is not gone then do another 5 days, the following monday to friday. Now I have not had any pains since starting this! Yahoo! and I have even had much more energy than normal...which is funny because I have had this cold, but I have not been feeling sluggish! So needless to say I am happy happy! So if I still have this bit of a cold by monday I will do another 5 days of flushing! I will still be blogging about my nutrition adventure! As I follow Dr Schulze's 20 powerful steps to a healthier life! Here is to a happy healthy balanced life! :)<br />

All I want to do is sleep! Curtis and I went to bed around 7:30 tonight as he was exhausted from work and I still have this dang cold that is making me just miserable! I tried taking a relaxing bath with epson salts but our wonderful rot iron tub just made the water cold! And we ran out of hot water before the water even warmed up the tub! So I put on my warmest fleece pjs and robe and started cleaning while my tea steeped! Had to do something to get warm! Yahoo! Everything is picked up and our house is clean but I am still wide awake! <br />
Today started of great! Woke up early...(I did not really sleep much last night either and was very wide awake early early this morning!) None the less I was productive and made a large pitcher of juice! Kale, cuccumber, sweet yellow Pepper, Spinich, lettuce, and apples! I was so hungry, and needless to say the juice was gone very quickly! The day went on great! I watched the documentary <a href="http://fatsickandnearlydead.com/"><i>fat, sick and nearly dead</i></a>. Wow! I would recommend this video to anyone weather they want to juice or not! Definitely an inspiration! Not that I am trying to lose weight here, but become healthier and clean out my body. It really is a good educational video of how much food we eat, that is not doing us much good at all but rather stressin our bodies out! That is my personal view. One of my favorite quotes from the video Joe Cross says is "we go on holidays, we sleep at night, we give our cars a service but we don't think about giving our bodies a rest."<br />
Now I have touched on the fact the reason I am doing this is because I want to be healthier! To clean out my system and hopefully get some of the pains I have been feeling under control! So I was thinking today weather or not I should really be doing this for the full 60 days. I know I am getting a lot of my daily nutrients that I need but my worry is, not getting enough protein with my very active lifestyle. Which I can just add seeds and nuts to this fast and I believe I would be ok! Second is losing to much weight which would result in me being un- healthy. (maybe these "worries" are just "excusses" to not go the full 60 days and maybe it is this cold talking but ... my plan when I am done this juice fast, is to continue drinking the juice with healthy well balanced meals, mostly consisting of raw (or steamed) fruits and veggies! Bring more variety and colour into my diet! I don't feel like I would be a failure if I did not do my goal of 60 days. I am sure people who have been less than a little supportive in my efforts of this may be saying "I told you!" "its not healthy" etc etc bla bla bla! I do not care what others think! This is me! Around noon I had made a spinach and orange juice and after I drank that I started getting the sniffles almost right away! my throat is starting to hurt...I feel like my body is already trying to cleanse its self! I was shocked! I thought it would take at least a week or two at the very minimum! But oh well just got to get over this hump right!<br />
So as the day went on I was getting more and more hungary but I just kept drinking and drinking! Juice, water, herbal tea! As I snack a great deal at night and usually eat the most during the afternoon/evening it definitely got tougher as the day went on not to mention this feeling like I have a bad cold that just hit me like a ton of bricks! Its not making thing much easier but I will not give up! I went out and got a "sports" multivitamin because I am very active and am teaching many classes and as I do this reboot I really hope I do not have to cut back from all the things I am doing, but we will see just one day at a time I guess!<br />

It turned out well but the crust was very crusty! I really was not sure if I wanted to go or not and hummed and hawed about it all day. My friend had convinced me to go so the plan was for us to meet at the dance. When I got there I couldn't find anyone I knew so I was feeling silly just standing by myself, (although it was a slow dance so I didn't feel too awkward) but I saw another girl standing alone so I went over and said "hey! hows it goin?!" and so we got talking and it was a little awkward at first so I just came out and said "ok! I dont know anyone here, I cant find any of my friends!" so being the sweet girl Megan is she invited me to come dance with her friends! So we were dancing the night away and I got to know the girls in the group and spotted this guy and thought 'hmm he is kinda cute, but then didn't think anything more cuz I was really not into the dating scene at this point.(So I thought) So as the night went on I saw some of my friends and danced with them and went back and forth to different friends and my group of new friends! I was havin a blast! As I came back to dance with my new friends! One of the girls came up to me and said 'hey do you see that guy over there? He really wants to dance with you so stick around for the next slow dance!' It seemed like forever for the next slow song to come!! (which happened to be the last two songs of the night) But they finally came and all of Curtis's friends said go ask him to dance! go go go! I was a little hesitant so I walked over and not having a clue what to say! When I got to him (he had kind of walked over to me too!) we just kinda stood there looked at each other for a sec and I think we both kinda said at the same time "so we gonna dance?" We danced to the song from the movie 'Enchanted ' and then another slow song came, things were goin well we needed to finish our conversation obviously... so we just danced again! The dance had come to an end and Curtis's friends came over and said "so what are we doin now?" We decided that we should go get slurppies (mmm) I didn't know where the 7-11 was that we were going to so seeing how I drove alone Curtis drove with me, after slurppies we went and watched a movie, (princess and the frog...and yes Curtis did try to hold my hand! ;) So the next day the whole group of us went out for dinner and a movie and then it started from there! We kept on hangin out. The next week Curtis asked me out on a date and then asked me to be his girlfriend! And I have been the luckies girl ever since!<br />

Ok really i was doing my moves at the dance and she couldn't resist my flavor. and the rest was history.<br />

Ok Ok. Well when I would go to church dances I would always tell my self that I would meet my future wife there so when I went to bow valley chapel I told myself that my future wife would be there so I was like what the heck i'll just go and have some fun. So I got ready and and went with a bunch of friends of mine. When we got there it was pretty lame to tell the truth, there was lots of candy and treats so that was good. As we were dancing there I kept seeing this cute little girl walking by, but I didn't really think much of it, I had seen her around before but I was to chicken to ask her to dance or talk to her. When me and some of my friends went to go and get some candy we took more then we should of, when we got back to our friends there she was dancing with the group. I remember looking at her and thinking she is so beautiful, and she was quite the dancer to. After a little while of dancing I think we kept catching each other eye but neither of us did anything. So after a lot of my friends bugging me to ask her to dance (I was thinking of asking her to dance the whole night too) I finally went over to ask her to dance and as I did she was walking over to me with this look that I knew this is the one for me and that I wanted to spend all time and eternity with. And I really can say that the rest was history after that.<br />

We dropped off the car and headed to his parents place when we got there Curtis's parents were leaving and he said something to the effect I just gotta do something then were leaving so off they went and Curtis asks me so are you hungry do you wanna go get something to eat before we go? In my head im thinking "hu??!! I'm confused" not really thinking anything we leave (getting into his Dads other car) and I'm just oblivious as I'm thinking "ok well his car doesn't heat up very well so I guess it makes sense??" ... We stop and get something to eat and then we start heading out to the Banff area. So in my head im thinking oh!? is he goin to ask me today and I tell my self "dont get your hopes up, he is just being really cute he knew we had the morning together and he planned something! (I'm a huge planner! So I love it when people plan things!) So there we are off to what I think is Banff and Curtis turns to me and says "so do you still think your going shopping today?" I think I just looked at him blankly not to sure what to say ;) We take the turn off to Canmore and I'm really feelin out of the loop, and then we arrive at the helicopter tours! Baah! I was soo excited and got some amazing pictures! The pilot was super cool and talked to us the whole time! It rocked! (thanks babe!) But the fun didn't stop there we continued onto Banff and had a great meal at Tony Romas did a little shopping. And went the spa to get a massage, upon our arrival to the spa Curtis turns to me and says... and I quote "do you have my phone?" I didn't.<br />

It was a lost cause we couldn't find it! As were looking along the side of the road Curtis has come to terms that he is not finding his phone and that we should start heading back as its dark and we had a party to get to! So he takes my hand and were walking along the side of the path to the car and then he leads me onto the path in front of the river and of course I'm thinking "oh! is he going to do it??!? is he going to ask!???!!" but he starts talking about the river and how pretty it is...I agree, totally not focusing on the river, but he keeps going on about the river as I'm looking for signs of him being nervous? but nope hes totally chill and cool and he gives me a hug and about what seemed like 20 minutes later he looks down at me and says, "well I wont keep you in suspense any longer" sits me on the bench and gets down on one knee!...<br />

See if you can guess which one is who's favorite! And which information is about who! (*WARNING: I may have gotten a little carried away this story is very fictional and cheesy! ;) hope you have fun!)<br />

Once upon a time there was a young girl who loved to dance! She enjoyed her life as she was surrounded with family and friends who loved her, she couldn't ask for more! Tho this girl had one dream and would not give up until she had fulfilled it, which was to find someone special to share her life with! She new it would come one day so she waited patiently and invested in other interests of hers such as taking care of young children and dancing!<br />
Mean while there was this young handsome fellow who was a kid at heart! One night after playing basketball he went out to eat with some buddies, as he was waiting for his waitress to come take the orders he spotted a beautiful blue eyed young lady across the room, he couldn't take his eyes off her! This young lady noticed this young man as the sight of him took her breath away, the way his orange shirt made his tanned skin ( which he had achieved from his job of working in the great outdoors washing windows) glow! They shared a short glance as the young lady blushed and turned to her fajita trying to be interested in her meal. They young man quickly ordered his pasta and looked back to where this young lady was but she was gone! He panicked "where could have she gone!" His heart sank and he returned to his beloved home and noble steed the bearded dragon Rocky!<br />
The following day the young lady rode in the back of a yellow cab to the airport where she was catching the 12:35 flight to North Carolina! She thought about the incident of the night before and this young man who she had shared glances with but her thoughts were scattered as the cab pulled up to the airport, after sometime of waiting in the check out line and going through security she was off looking for her gate. Her stomach all in knots and full of butterflies as she hated flying she collided into someone, her reading material for the plane spilling all over the floor, literature and pictures of Hawaii were everywhere the stranger who she had bumped into apologized and stopped to help her pick up her belongings. As they gathered her items he asked<br />
"off to Hawaii hey?"<br />
"no just obsessed with it off to Carolina actually" she replied as she looked up meeting this young mans glance she realized this was not a stranger after all but the young man who she had encountered the night before at the restaurant! In some shock she stammered<br />
"and where are you off to?"<br />
"Mexico, I'm Prince Charming and you are?"<br />
" your lady in waiting!<br />
From that day forward Prince Charming and his Lady in waiting courted and became best friends! They dated for 8 months and then made plans to be wed on April 08,2011! And they lived happily ever after!<br />
